An untraditional castle, "Montezuma's Castle" near Camp Verde Arizona. Built by the Sinagua Indians between 1100 and 1400 AD.

Here's an odd ball for you. Not really a castle per se, but the guy that built it calls it one.

One guy has built this over the past 40+ years. Solomon's Castle covers 12,000 square feet and stands three stories high. It's tough to photograph in the blinding Florida sun, as Solomon has covered every exterior surface with discarded aluminum printing plates.

Lydford Castle - this was as a prison at one time and had a very bad reputation even for the time.

Angle Castle (or Tower House), Pembrokeshire, Wales.

Angle Castle was built in the 14th century to provide secure accommodation for a powerful local family. It overlooks the sheltered anchorage of Angle Bay near the mouth of the Milford Haven estuary and may have been intended as a defence against sea-borne raiders.

The castle is an example of a tower-house, a type of single-tower fortified residence that is common in Ireland, Scotland and the English/Scottish borderlands but is almost non-existent in Wales (another possible example is the main tower at Gwydir). There was a walled and moated enclosure to the north of the tower and the south and west sides were protected by marshy ground. The beach was a short walk away to the east.
