There's so many factors that could be contributing to the problem, possibly multiple ones compounding the problem.
Could you convince them to log into their email using a browser? Email clients can be all over the place, specially when it comes to formatting (browsers aren't much better but at least they are fairly standardized).
I'm guessing your monitor is a different resolution to theirs. You might have to use smaller images to maintain formatting.
Is email the only solution? You could put them in a private folder on flickr with a password and send them the password or host them on a website/google drive/other cloud storage and let those websites dictate the formatting.
I did try using the Dropbox link option recently but the person had a bit of an issue with that.
They eventually were able to see the pictures in the link.
The issue wasn't with the link but with the person using it for the first time.
They don't have a Dropbox account, that's why I used the link option.
I've just sent a batch of pictures to this person and I've resized them to small instead of medium.
I'm going to visit this person today so, I'll see how the pictures look on their laptop.
If that works, that's what I'll do from now on.
If it didn't, I might just sign them up to Dropbox if they want.
I just want to make things as easy as possible for this person receiving multiple pictures in a single Email.

By the sound of it you are "including" the images in your emails, so they show up embedded in the text and therefore will display differently depending on how your email fits on the recipient's screen whether it is a phone, an IPad, laptop or desktop.
How about "attaching" the images instead, so the recipient can choose to see them in whatever app he/she uses for that?
The pictures are being sent as an attachment as far as I know.
This is how I send them.
I highlight all the pictures I'm going to send, then right click on one of the pictures.
That brings up a "send to " and that gives an option "mail recipient".
When I click on that, my Email program opens showing the selected pictures being sent as attachments.
They aren't showing as being embedded in the body of the mail before I send the mail.
But when the person receives the mail, all the pictures show in the body of the mail.
They don't have to click on any attachment to see the pictures.
