Thanks Levina. Yes, it is an aged Gouda imported from Holland, but to be technical it is "extra belegen" since it has only aged for 6 months. Sorry, one of my cousins in Holland is a cheesemonger and she is rather precise about that kind of thing. She tells me that real "oude kaas" requires 10+ months of aging. I love "oude kaas" too and "Nagelkaas" is my second favorite.

Well, to be honest, I love pretty much any cheese. :oops:

I never have "extra belegen", probably because it's rather an in-between flavour and I'm a person of contrasts, so it's "oud" or better yet "overjarig" or "jong". I do love "rookkaas" and "komijnekaas" too though. "Nagelkaas" is very nice too! The Dutch and their cheese, eh? :-P
