I find it astounding that the only way to remotely start/stop video recording, with the 7D, is via the infrared remote (RC-1/5/6).

Two questions:
1) Is there a third-party firmware, such as 'Magic Lantern' that I have for my 50D, that would use a remote plugged into the 'Remote Control Terminal', that would start/stop video recording?

2) If the answer to #1 is 'No', which (if any) Canon models do provide this function through the Remote Control Terminal?

The beginner clicks the shutter and says "Let's see what I got." ... The experienced photographer thinks "How can I capture what I see?"

There is MagicLantern firmware for the 7D:
http://www.magiclantern.fm/index.html (external link)

MagicLantern provides an option for video recording start/stop using 'half-shutter' - via the on-camera shutter button, or a remote (such as RS-80N3).

Be sure to read all the information, on the MagicLantern site, regarding firmware modifications.

I now have MagicLantern on some CF cards for both 50D and 7D.

The reason Canon don't support this from the beginning is because the camera is a still photo camera, primarily. Even during video shooting, if you press the trigger button, you'll capture a still image. For that to work, it has to be the way it is with the shutter button, and the N3 remote control socket is just an electrical extension of the shutter button.
