How do I get the LCD and monitor to display at the same time on a Canon 6D?

So for full disclosure, I'm a guy with camera (who has really only done stills) trying to help out an organization with some video work.

So the title somewhat sums it up... How do I get the LCD and monitor to display at the same time on a Canon 6D?

I'm trying to both take a video recording and display what I'm recording for an audience essentially in another room. When I hook into the HDMI port on the camera I can see the recording on the remote display, but I lose the live view feed to the LCD display. How do I get the camera to display the recording on both the back of the camera and the remote monitor at the same time? Or can it even be done?

So now you are probably asking yourself "What in the world is this guy doing?". Well I'm taking a video of an organ recital in the organ loft of a church so that the people in the church listening to the recital can see what the organist is doing. I'd like to record this as well as display it, which doesn't seem to be a problem, but I'm having a hard time figuring out how to actually see myself what is being displayed/recorded. I can't really see the monitor from the organ loft. Well, not well enough to see the framing and certainly not well enough to know if I'm in focus or not. Hopefully that makes more sense as to what I'm asking.

Also is there a way to have the grid and various bits of info displayed on the LCD, but just the "output" video displayed on the monitor without all of that distracting stuff for the audience?

Anyway, I'd love to get any additional pointers for a true beginner. Should I put the camera in Tv mode and set it to 1/60 sec? What recording/compression output should I be set to?

I will be running a feed from the sound system recording directly to the camera so I don't pick up all the noise I'll be making.

One last thing... if this isn't possible to do on the Canon 6D, I do have access to a Nikon D7100, Olympus EM-5, and an Olympus EPM-2 if any of those would be better.

You can't.

There isn't enough horsepower in the camera to drive both displays. As soon as you plug in the HDMI cable, all output goes there. If you want to further split the signal, you'd have to do that with an actual splitter outside the camera. (Splitters are pretty readily available, but a different item/cost.)

The same is true for any Canon camera that I've tried (not limited to the 6D). I don't know about Nikons.

Not sure on the 6D but with the 1dx Mark II there is a setting that allows you to do both at the same time while recording. I do this a lot to allow touch screen use on the camera and use the focus assist on the monitor. However to review playback only once recorded it will go just to the monitor or LCD but not both. This is true for stills and video. I can also apply a LUT with the monitor and see a different look while recording. Also depending on the monitor I can pick the view I want, grid on camera and not on the monitor etc. Again may be of no help for the 6D but canon cameras can do it. I use the SmallHD monitor.

You can see a little of it here. I do not have both on the screen at once but they are showing the same thing. You will get the idea. You can see the info on the LCD but not on the monitor.

I should add that my monitor is only 7" but SmallHD makes much larger monitors also but pricey. Mine is just thru the HDMI input which also has an output to send to another monitor also.

If you use a composite AV cable from the USB port on the camera I gather both displays will work,will need an RCA input though.
