And the more assuring grip on the Nikon.
I have the same problem with A7III (A9/A7rIII have same grip), the D750 that I had previously could be held on one finger like that. A7III cannot be held like that even on three fingers - an opposing thumb is necessary.
It is all about the grip shape.

I don't have any problem with height of the grip as I use Meike MK-X1EM grip extender all the time.
I have held Z7 recently. The grip was better then A7III, but I did not like how I need to change holding position to use front wheel. The Z7/Z6 is first version, it is unrefined in many ways (AF system usability as well). I guess Sony will improve grip next time they will redesign it (not sure if A7IV or A7V) but they will have to move grip farther from mount (some people that use fatter lenses have problems fitting fingers between grip and lens, no problem for me with my current lenses).
I have some tips from my D750 to A7III transition here (it even includes this complaint about grip shape, however it was not updated for quite some time so it misses fixes from 2.0 firmware like brk combined with uncompressed raws and silent mode that now works well):
