Buy a PC...and with the money you saved...buy a new lens. The MicroCenter machine I bought was $1500...a comparable Dell was over $4k and a MAC was over $5k...
I edit 4k video without proxies...no problem.

SSD's work fine, but unless you want to spend lens level money on storage, it's not practical to store a whole lot on SSD's right now. That really interesting, is this issue specific to spinning disks hooked up vis USB? I have a intel model mac mini with 4 HD in a thunderbolt enclosure basically glued to the side of my mini and I have never had issues with Bluetooth devices, the enclosure however is hooked up to the mini via thunderbolt. Yep pricing is good. The highest spec iMac M1 is £1699 in the uk. I easily spent that for my i9 intel build including the screen and I don’t even have that expensive a video card Leica M11 | Leica Q2 | Sony α7RV

It's an actual thunderbolt 3 enclosure? I may need to try that out. My understanding is that the issue is with the usb 3 signal causing interference with 2.4ghz wireless signals but I think native usb c or thunderbolt devices should be fine. focalpointsphoto.com

My current workflow is I do all my projects entirely on an ssd and then archive to my Drobos (HDDs) when done. So, maybe I’d be ok? That's what I do, but merely connecting my HDD's to the mac mini screws the bluetooth up. If I want to use bluetooth, I have to disconnect the drives completely. focalpointsphoto.com

Yes, Akitio Thunderbolt 3 enclosure. I actually had two enclosures connected to my Mini at one point but I've reduced it down to one now. Sony A1, A7R2

But still... the top of the line that I can find, is $1600. That is an 8 Core Cpu, 8 Core GPU, 16GB of Ram, 2TB harddrive...sounds good for photo editing, and would probably be just fine with that. But I bet it suffers when it comes to video. I have an AMD Ryzen 12 Core, 64 GB memory and an 8 GB GPU, It also came with a 2TB M.2 hard drive...and is fully upgradable and expandable. For less. Apple are cool products, I get it, I shelled out for my wife to have a MacBook AIR for Christmas...she loves it...but you are stuck with what you get, good luck fixing anything or upgrading anything.
