is it good with the butter? I usually use a shot glass of water and it steams the yolk perfectly. I would think the butter changes the flavor of the egg too much.

It's a personal choice–butter enhances the egg if you like butter flavor. For those photos, I started with olive oil, which we're all supposed to use now for health reasons. Since then, I got a small pan that cooks one or two eggs with no lubricant at all and no sticking.
