Can the 80D perform a 7 shot bracket with all shots being either minus or plus? I don't see it in the manual, so I assume it can't be done. But I thought I would ask.

Example: Camera in M. Shutter speed 500. Set camera to 7 shot bracket that would perform 500, 250, 125, 60, 30, 15, 8

Yes. Dial in 7 shot, one-stop bracket, and then dial in 3 stops of underexposure. You'll get the sequence you listed, from -6 to 0.

I'd do it in Av so shutter speed is changed for bracketing.
