Is this just not possible?

the photographer has an X-T2 which evidently the menus and options are slightly different on. He shows how he gets back button autofocus (using the AF-L button) but I don't seem to have that menu option.

seems to explain how to set it up, but in following the instructions what he outlines doesn't seem to work exactly like using the shutter button to autofocus. It seems that the back button focusing works with this method, but it's slower than having the camera in "s" mode and using the shutter button. Maybe it's just in my head, but the focus seems to snap into focus faster with the shutter button when compared to using the AF-L button like the article outlines.
EDIT: actually, after further testing on that second link, if I leave instant autofocus setting to AF-S rather than AF-C that actually seems to give me back button autofocus that's fast and how I'd expect. So I'm not exactly sure what I gain (or lose) by setting that instant autofocus to AF-C?
