You should probably consolidated all of your a7rIII questions into one thread...

But for a typical wedding, I've never used more than two batteries. I had to use a third battery once...Vietnamese wedding that started with a tea ceremony in the morning and had me shooting for over 14 hours. Wasabi makes third party batteries now and they're $30 cheaper than the Sony ones. But if you're going to shoot weddings, do yourself and your clients a service and use first party batteries. Third party batteries don't have as much capacity, and there's a risk of these things swelling and getting stuck in your cameras and screwing you in the middle of a wedding.

In terms of memory card...ideal world, UHS-II cards are what you should use. But they're pretty damn expensive for high capacity cards, and if you're shooting a wedding on an a7rIII, you'll want a 128gb card. I don't like switching cards in the middle of weddings, as that's when they get lost, or corrupted, or whatever.

I'm using a sandisk u3 card right now...95mb/s. It's fast enough that you'll never fill the buffer, but there are times when I have to wait for the buffer to clear. That's the downside to 42mp for weddings.

In terms of adapters...right now the Sigma seems to be the one to get as they've enabled eye-AF across the frame via firmware. It's a constantly moving target though as metabones and Sigma are constantly improving their adapters.

Ideally though, for a wedding you'd want access to some native glass for lowlight shooting. I use adapted lenses when shooting lenses, but they don't work well when the lights turn off at the end of the reception.
