Definitely pan. Here are my typical airshow settings on the 7Dii:

Tv Mode
1/2000 for jets
1/250 for piston/turboprops
1/160 or 1/200 for helicopters

Auto ISO

AI Servo AF

Single point AF (center point or the one above) for single planes
Zone AF (center or moved up) for multiple planes in a formation

AF Case 2: Continue to track, ignore obstacles

I usually use low speed continuous shooting (3 fps?). Sometimes I switch to high speed continuous (10 fps), but I try to use that sparingly because it's a lot more images to go through in post.

There is a great online airshow calendar at milavia.net that I use to plan my trips. I'll generally only drive about half a day to catch an airshow. Last year I got lucky that I was in Portland on business the week of the Oregon International Airshow, so I stayed over for it. My boss was paying for my airfare anyway, so I just paid for the extra night in the hotel.

The RAF Red Arrows have announced a North American tour this year! So far there aren't any stops scheduled close to me, but hopefully they're still adding dates.
