At the moment I am leaning towards Lightroom CC due to extra features and flexibility, hoping I can find reasonably fast Internet connection every couple of weeks.

Don't rely on hope for a backup plan. Additionally: On none of my travels I encountered internet access that has robust and plenty of upload speed (= to be able to upload >50 GB). I am not sure how much you intend to shoot - but if it is not a lot then go with spare sd cards and external drive and forget the hassle of uploading. If you shoot a lot then uploading just practically might not work. Then you might want to go with spare sd cards and external drives. :-)

3-6 month is a short time from data retention point of view. Since you are doing backpacking, flash storage had distinctive advantage over HDD type of mechanical storage. I think the WD external SSD with card reader built in or similar device is the best choice. Taking more CF or SD cards are OK for smaller capacity. If GB gets big enough, an external SSD will be cheaper and more robust solution.

And whatever you do, do NOT trust USB flash drive. Again, do NOT trust USB flash drive if your data is important to you. The lowest quality flash makes into USB. In fact, junk makes it into USB. They are great for short term storage for not so important file or transferring files tho

Looks great, except the price!

Which Canon bodies allow copying files, ie built in feature?
I know 5D4 and 1DX2 can. (Copy files between card) This allows in camera backup. EDIT: 5D3 can copy between cards.
For the price of the NVS2801 upgrading to a 5D4 would be a cost effective alternative.
