Does anyone know if this m.2 SSD can be put into a 2017 or 2019 iMac?

I can't seem to find if there is a bracket that will allow this to be installed and still maintain the read/write speeds.

Can't help with the SSD, sorry. But talking of iMacs ...

I was rather p*ssed off to discover that, whereas I was able to upgrade the RAM on my 2011 model in 5 mins flat, via the little rear door, doing so on my 'improved' 2019 replacement requires a pretty comprehensive disassembly and is much more fiddly and fraught.

After a quick google, it appears that while Apple use a standard SATA connection for the spinning hard drive, the 21in iMac doesn't have an M.2 drive and the 27in only has it if it started life with a fusion drive and then it's not a standard M.2 connection but a proprietary Apple one. There is an adapter you can buy, but not all drives work with Mac OS.

You also have to remove the screen to get access the drives, which requires some familiarity with working on electronics, tools to remove the screen and an kit to replace the adhesive tape strips that hold the screen in place.

Carefully read the reviews at the Amazon listing. The drive is a nightmare to clone.

The 2019 RAM installation is the same as it's been for years, are you talking about the 27"?

In m opinion, and I‘m an engineer/IT person, Apple makes after purchase modifications difficult. They would rather do the work themselves or sell you a new unit. Look around where you live and you might be able to find an independent shop to replace the hard drive.

I like dealing with my local shop when it makes sense, but really, the link I posted should always be the first stop for anyone wanting to upgrade a Mac. Their products are top of the line and the information provided on the site is second to none ... even if you end up going with another vendor.
