I shot this B25 yesterday and processed the raw file for white balance and just touched a few of the sliders (2nd image) then I processed it in PS and LR. The wife likes the processed one better, I like the richness of the 2nd (raw) one.
This was shot with my 5D Classic

which one do you like better, one or two?

I go with the wife on this one. In the 2nd image the colors are too muted and dull.

Personally I prefer No2 but is Difficult to choose an outright preference, I think would depend on the use... I think the Raw No2 looks more natural and realistic and so would be better for publishing in an aviation book. The first one however, pops and would be good as display print/calendar/commerc​ial usage. These are only my humble opinions and I am sure there will be many that disagree since we all have individual tastes.

It's a toss up for me; I'd prefer to see a middle ground. Maybe dial the saturation back about 20% or so on the processed image; the details pop in that one better, but the saturation and contrast are just a bit heavy and look "crunchy" to my eye. If picking one to print, though, I'd probably stick w/ #1.

Which more closely resembles the subjects appearance as you remember it?

I'll plead some ignorance here I use the subscription based LR to do my work; am not an expert, don't think I have access to just ACR? Is there a reason the LR version has to lack properties of the ACR version?

I prefer the LR version, even though not as natural especially in the sky.
