I want to use the second curtain, but in menu > flash settings > Shutter synchronization, I only get the option for first curtain and HSS.

Any help would be appreciated.

Although not for Godox there are lots of similarities in behavior with Canon Speedlights. There may be some help at https://www.uglyhedgehog.com/t-601658-1.html (external link). Go to page 2 for what might be the most beneficial.

Canon does not support second curtain sync when using off camera flash, but some Godox transmitters can do that by making selection on the transmitter.

Which transmitter you are using for the AD600?

Most Canon bodies have this , or similar, in their instruction manuals:
from 90D.

THIS IS A LOW QUALITY PREVIEW. Please log in to see the good quality stuff.
Older bodies typically only enact SCS at 1/30 or slower. (Edit: for the 5DIV it's 1/25th or slower.)

Even then, you need triggers that claim to offer SCS with Canon specifically.

Can you set second curtain on the Godox transmitter? On the Xpro-C, it's the SYNC soft button.
