The journey as a photographer is very complicated. I understand you perfectly. I am also a beginner photographer, and I also had some free walking tours with a pretty famous model from me in the city in different cities in Europe that you can find if you visit the site (external link). On such trips, you should be very compact and take only the necessary things. Since this is your first trip as a photographer, I think option 1 would be the most suitable for you. You should keep 70-200 2.8G because it is perfect for a beginner, and besides that, you have a 24-70 2.8G, and a bigger bag is the best solution.
