I moved from a Canon 7D about a year ago to Fuji as well. I also switched from Adobe and Camera Raw to Capture One right around the same time. I have been very happy with the sharpness and lack of noise all the way up to ISO 3200. Perhaps even higher, but I rarely need to do that.

I find that I no longer use my two surviving Canon bodes, 7D2 and 80D, as the X-H1 will beat either of them for everything, except the tradeoff between an OVF and an EVF. The only Fuji lenses I have are the XF 100-400 and the Fuji 1.4X and Fuji 2X extenders. My standard walking around birding rig is the X-H1 with the XF 100-400 + Fuji 1.4X; that is nearly a pound lighter than my 7D2 plus Canon 100-400 Mk2 + 1.4X extender. You will notice this.
The Canon lense will focus faster than the Fuji, and has less tendency to lock up on the background (at least in the case of the Canon 100-400 you can twist the manual focus ring, the Fuji is focus-by-wire and the fastest move is to point it at the ground and focus to get off the far background). With the 1.4X extender there is little difference optically between the two systems.
Recently I have been experimenting with what can by done with either of the lenses at 800mm and f/11. With the Fuji, you are just as well off using the 1.4X extender to get to 560mm and cropping; with the Canon 100-400 Mk2 this is a different story, there is additional detail available, even two f-stops past DLA, when used with the X-H1 -- but you have to absolutely nail the focus. Depth of field is really narrow, even at f/11. Best results occur when you are sitting, at least for me.

Canon 100-400 Mk2 plus Fringer Pro Adapter plus Fuji 2X extender. Focus is surprisingly quick in good light, and the lens IS does a good job of stabilizing the VF.

Given that f/11 is at least two f-stops pas DLA for the 24Mp X-Trans 3 sensor, there is nothing to be gained by stopping down, except losing more light.
