An external mic will always give better sound I use a Rode VideoMic on my Canon 7D. However you should get some sound from te camera mic, although you don't state what camera.

Exposure in manual mode is the same as taking a photo and the same criteria apply. However it is normal to shoot at twice the frame rate ie at 24fps then shutter speed should be 1/50 or if at 60fps then 1/125, the balance of the exposure is then via aperture and ISO. If in a changing light situation then I find it easier to set shutter and aperture and set the ISO to automatic. Aperture will of course have DOF implications and using a ND filter may be required in bright situations if using a wide aperture as ISO can't go below 100.

With the camera in Video mode, you might need to spend a bit of time rummaging around in the menu screens. You'll likely find a menu that will give you some control over the audio recording in your video. You may have unknowingly changed something from the default settings. Maybe a setting that that turns the on-board mic on or off. Maybe a choice of automatic or manual control of the recording level.

Obviously, make sure the on-board mic is enabled and try the Automatic setting for the recording level to at least test if it is working at all. Or set the level control to Manual and try recording at different settings and see how the camera responds.

Thank you, Pekka! I'm sure some members here might have imagined that POTN might begin winding down. But that doesn't make the news any less disappointing. So generous of you to allow us to go along for the ride. As a result you gave us a way to help each other become better photographers. But there's still so much more to learn.
