As with all photography there are no best settings.... there are only the settings that work for that exact moment/place. Light changes throughout the day so if I tell you the best settings now they won't be right an hour from now.

3 Bracketing photos OR 5 Bracketing photos?

Yes, 3 or 5 or 4 are all good. depends on how extreme the scene is, what software you use and how you like to work. Try 3; If you don't like how it turns out try five.

Mode AV OR M?

Yes these are both good. Which d you prefer?

ISO?

Assuming you are using a tripod then your camera's base ISO as that should give the least noise. If you are not using a tripod then the lowest ISO while still maintaining a proper exposure.

Metering mode?

Others may offer different advise but I would suggest spot metering so you can measure the brightest highlights and the darkest shadows and set your bracket to cover that range.

Shutter speed?

No one can tell you what shutter speed you need because....
1. We have no way of knowing how much light there is in the scene you are shooting,
2. Or what your other settings are (Aperture and ISO)
3. Plus you are shooting 3-5 different exposures so different settings.

You meter the scene and then set the shutter speed for the exposure you want.

Dan covered it. I would add to shoot RAW. Also, take 5 or even 7 images. You may not need them but it's a lot better than needing to go back to the place to take more shots. Especially if you need to bother a resident or a real estate agent.
