I like the consensus that is building on the quality of the crop mode images in these cameras. However, there are two factors that make be question whether or not mirrorless is in my future (as long as there is a choice, that is). How is the shot lag with the EVF vs. optical? Also, battery life? As one who waits for the moment before tripping the shutter, shot lag is a big factor.

I don't even notice lag. As far as TC, I notice no difference either and the 2xTc works waaay better with the 600II than the 7DII ever did; it was a slow dog on the 7D2 and I never used it. You get spoiled when you shoot with the 1D cameras though.

When I learned the R5 had the crop mode, I knew the 7D2 was doomed for me and would hit the for sale block.

Both.
I accidentally shot an entire play in crop mode as that's where I had left it a few months earlier. I was stunned how close 70mm was on the 70-200mmm, but switched to the 35-150mm and was very happy. DUH! I did not notice until I was post processing and I was like, wait, aren't R5 image way bigger? for what i was using them for, 17MP was still about 3x what I needed! But hopefully I won't make that mistake again.

In essence, it immediately replaced my 7D2 and 5D4 in one body. With better AF and IBIS to boot.

I tend to shoot in full, but on occasion when i realize everything I am shooting is far off I'll drop down to crop mode just to save on card space and cropping.
