Sorry, I've never been to that airshow, but had some general thoughts on them.
I attended an airshow last weekend for the first time this year, and had good results with the 400/f5.6 mounted to my R6 and then to my 7DII. I also had really good results with that lens when I'd taken it the Huntington Beach Airshow several years ago. I also brought my RF800 f/11 - that one I found to be quite a bit trickier, as I had difficulty finding the subject at times - especially the really fast-moving military fly-bys. But I'd expected that, and viewed it as good practice.
I also brought my 70-200 but for aerial shots, found it to be lacking in reach for the most part. But it can be useful for static shots of the display aircraft. I also brought an ultrawide lens for static shots and found that to be great when you want to get right in there but capture all or most of the plane.
Also, I realized that with the COVID down-time, I was really out of shape as far as holding the camera and lens up to my eye for long periods of time and keeping it steady - my arms were killing me after and the following day. I'm going to need to get back in the gym and just keep building my experience back.
And here's a tip - take a look at the many great photos in these air show threads for the EXIF info, particularly shutter speeds. I think you'll find that for jets, higher shutter speeds (like 1,000 - 1,600) are just fine since you don't need to worry about capturing prop blur.
