Canon 6D MK II ..Is it Possible to change shutter speed while looking thru viewfinder..?

Yes, back dial for one setting shutter finger dial for the other. You can chose which is which in the menu.

Here is what I found in the manual. Just go to the "exposure" tab in custom controls and assign one of the wheels for Aperture and the other for Shutter speed.
