Lately, thanks to a suggestion on this forum, I decided to start shooting w/ the contrast and saturation turned down a bit in the camera. Then, when I process the raw, I bump up the saturation to where I like it and keep the contrast somewhat understated. Then, once I convert it to tiff or jpeg, i'll play with the curve and turn the contrast up that way, really makes things pop and you don't lose so much detail IMO. That's what has been working for me, but everyone does it different.

That's just the way it works when you're panning. Unless you're shooting the car perfectly perpendicular as it goes by, there will be a part of the car more focused than the other. The closer you are to the car (subject), the more difficult it is to get the entire car in focus. Give it a shot, put the camera in shutter priority, select a somewhat slower shutter, and go pan on random cars driving by. I usually put the AF on servo.
