I am wondering whether there is somethig n wrong with my 5D or whether I just cannot fathom the controls!

When I press the shutter button halfway the AutoFocus and Auto exposure don't both lock
The AF does but not the AE - what am I doing wrong?
i.e. the exposure keeps shifting according to the subject brightness even with the shutter still half pressed, so if say I half press the shutter and the exposure is 30th @ f5.6 then move to a brighter part of the image it changes to 125@5.6
When I completely reset ALL the camera settings it works OK, but I must be changing something OTHER than the cfn16 which is the only thing that should affect it I thought, as it doesn't work after I change some settings but I have no idea which is doing it - I just lose track!
