Also, if you expose to the right a bit you can bring the exposure back to normal in post processing and the noise almost goes away. Not sure why, but call me JJ.

I like to expose heavily for ambient. Shooting wide open and a high aperture gives me that. Head over to the nightclub photography topics and you will see there are so many different ways of doing it.
Some of the nightclub photographers work by using a fast lens, low ISO and slow shutter speeds. It just depends on what you are going for. Have you got a sample photo possibly? If I shot in bright sunlight at f/2.8 and ISO800, I would require a shutter speed of 1/30000 of a second - unfortunately my camera doesn't go that high
