I tried a Procar race , 2 weeks ago , and you can see the results on :

Of course , these cars don't reach the phenomenal speeds of the Nascar bolides but , provided you follow the cars and select the highest possible shutter speed , it's all possible .
Selecting light metering and focus in advance is a must . It's not possible to get a picture if you depress the shutter from 'scratch' .
As John replied before me , a lot of practice will help once you'll be on the track . Why not shooting cars on the highway , if any possible , of course ?
