With a gray card, just use the gray card reading, take a "no sky" shot & see where the white uniform falls. If it's right against the right edge, stop down 1/3 stop & try again.

If I remember correctly, when taking a reading from the gray card, do I fill the frame with the gray card? That is what I did the last several times I tried it. I do know that when the lighting changes I have to take another reading.

I think they're good shots, and I would mind betting your cousin and her husband will love them. It's OK to agonise about exposure and white balance here on these forums, and it's OK to want to be a perfectionist - but people who aren't photographers don't think like that. They'll think "nice photos".
