OK, back to the original question.

The two most important things to use:

1. Your exposure compensation dial. Use +1 or +2.

2. Your review function. Check your results and go from there!

But be prepared for some shots to still be way out. As others have said shoot RAW and err on the side of underexposure. Even so it is common to have snow scene shots with such a wide variation of exposure level that the camera just cannot cope with it. The eye/brain exposure system is still way better than anything electrical.

Please have your doctor write you out a prescription for Smile-agra, because you obviously need to grow a sense of humor.
