EF-S = Electronic Focus-Short backfocus. Meaning the lens mount sticks out to get closer to the sensor

Not necessarily. In theory yeah but in reality it just means it won't work on a full frame camera since the mirror would smack the mount and get torn up in the process.

Depending on the context, you may also see USM to mean "Unsharp Mask" if the topic happens to concern post processing or Photo Shop.

I am looking at buying two sigma lens to go with my rebel. I know the rebel is not full frame so right now this is not a concern but I would like to upgrade to a 5D soon. How do I know if lens's that are not Canon will work with the 5D and the rebel?

Sigma designates their EF-S line as "DC"

Only the 5D and 1Ds/1Ds II are full frame.

no, it is compatible with EF and EF-S lenses
