CWB - Use it 100% of the time?

I shoot with a grey card when I'm doing formal shoots. AWB the rest of the time.

Never, never, never use the palm of your hand for CWB. You can use your hand for exposure determination provided it is in the same light as your subject.

I love to use CWB when I can, but most of my shooting makes this impossible, so it's AWB and RAW
