I've done this before using convert to grayscale in photoshop but I don't think this is the best way.
What I've read in the past just isn't clear and didn't make much sense.
Is there a step by step instructions using color channel or something?

Use DPP in Monochrome with the "red" filter setting... take it to CS2/PS and adjust the highlights/shadows to your liking. Want a more in depth and better answer? Search Google for a "channel mixer" conversion tutorial.
