No matter the lens you will want to invest in a level that attaches to the hotshoe of the camera.

I think I've been sold on the benefits of the TS lens, so I will add that to my "To Buy" List... But, I'll wait until I upgrade to the 5D.

For now, I just added the 17-40 f/4L to my basket as well (I''ve had this lens on my list for a while now... this seems like as good an excuse as any ;) )

I already have a good tripod w/ levels, but will look at a hotshoe level as well. (Can't imagine they cost much)... I will need a remote also. Probably go w/ a wireless.

I am quite happy with the 17-40L on a 5D, and also looking forward to add some TS lenses to my gear.

In any case, you may also consider using any lens to shoot several pictures and stitch them together in Photoshop (like a panorama), in order to get a wider field of view if needed. The great thing about TS lenses is that they make the process very simple, just 3 shots without moving the camera (only shifting the lens).

Instead of consulting a photo store on the web, go into your local hardware store for a less less expensive level that verifies level in a full circle.
