No keys on large jets, either a rotary switch or button, a fuel switch allows the fuel to be introduced at the proper RPM and temperature.

On the Rolls Royce RB211 the EGT must be below 100C prior to fuel on, normally just a turn limit.

Dead fossils is a reference to petroleum based fuel. As in " I watched 100, 000 pounds of dead fossils go out of the tailpipe today."
