I have had pretty good luck converting the RAW file to b/w using Lightroom beta and then tweaking.

I also use Lightroom Beta to convert my RAW files. It is a fast-running yet powerful program. I love their b&w tool because it is a channel mixer with 6 channels instead of Photoshop's 3. It gives more control. Coupled with the tone-mapping tools, it is very powerful.

i use lightroom to convert my raw files and its totally amazing. As for the B&W camera raw problem my 20D does the same thing so i dont bother to use the B&W setting in camera now,i've tried to get into the habit of seeing the composition in B&W and then have fun tring to recreate the thing in photoshop.
