I've a Canon S3 which, in the instructions says in Movie mode it can film for 1hour or 1Gb.
Is 1Gb the limit? i.e If a buy one of the new 4Gb SD cards can I film only up to 1Gb or can I film to the limit of the card ?

Figure on about 100mB per minute and you won't be too far off. After the 1gig is filled up the camera saves the file and then you can continue shooting. I wouldn't even bother with the Low res, the quality is not really acceptable (for me anyway). My S2 works the same. From everything I've read I would stay away from 4 gig cards. I'm with Thomas on cards, I carry 2 giggers. Canon S2IS with DC58e Various Hoya Filters
