I use a ringflash and XT for my office work. Works great, love it!

I upgraded to a 30D and was wondering a couple of things.
1)how do I set the 30d to make the 30D shutter go at 1/200 like I did with my XT?
2)I would like to use my ringflash for more typical shots, of people and the like, when I really need it instead of the one that comes on the camera. How do I set up the camera (or can I) to let me pic the DOF and have the camera figure out how strong a flash is needed to light up that area with the settings I have chosen (I shoot exclusively in the creative modes and RAW)? Does that make sense? again, I dont know much about flash and have read the stickies, but am having trouble applying all that info to my wants.
