Now of course it would be nice to have options in the conversion program to directly generate B&W images without going through color.

I see these additional modes basically as a marketing tool to provide faster access to a given set of defaults. Unfortunately these defaults are non defeatable as you have noted. Ah well the B&W mode you will have to get rid of the color in PS. Even the panorama mode can be simulated in P mode and RAW, you just won't have the camera to prompt you in the frame to frame overlaps. The Photostitch software can then be used with resulting TIFF files. Canon 6D, 1DmkII, IR modified 5DII with lots of Canon L, TSE and Zeiss ZE lenses
