400d with non Canon lens

I have EOS 400d.
I both ring Hama Canon AF/M 42 and attached on Canon body lens "AUTO RIKENON 1;1.4 f= 55mm" and lens "MIR-10A 3,5/28mm".
But..problem...I have not good focus, I have not deep dept of field...
I preset/take a shot with option AV..but dept of field moving! If I use original Canon lens EF-S 18-55mm (got with EOS 400d body) dept of field also moving.
Object I front is sharp, in the middle is not sharp and object in back is sharp.
Also, because those lenses haven’t compatible with Canon lens-auto options I can’t use, read aperture, and I adjust aperture on lens..but many times pictures are too light (in AV mode).
Why?

Have no idea what you mean by "moving depth of field". Maybe if you post a picture example of it.

With manual lenses I always get underexposure, so I must add +1EC. In your case, try adding some negative EC.

The depth of field is going to me very slim on a 1:1.4 lens when it is wide open. You can get increased DOF by stopping the lens down. A posted picture would really help to explain better your predicament. As to your other issue, sharp image in front and in back, that is optically impossible. The lens focuses only on one plane. Move either in front of, or behind that plane and the focus starts to drop off. The wider the aperture, the quicker the fall off. Your third question as to why your pictures are to light, it’s because the lens is letting in too much light for the chosen speed. With non-EF lenses, your better off using full manual and exposing properly.
So, I’m guessing here, but it sounds like your setting the camera to Av mode but the camera can not control the aperture so it is shooting at f/1.4 all of the time. That would account for your narrow DOF and the overexposed shots as well.
