really stupid 1d question - please help

ok i have a really simple question, i just cant work out the answer
when i stick my 1d in manual mode, it uses the settings from AV and TV and i have to adjust them, when i go back to AV or TV it has adjusted those too

on my 350d i can set a shutter speed in TV, a aperture in AV and a completley different set in M, so i can easily switch between manual, AV and TV and get different sets of shutter/aperture combinations easily
my question is
how do i get my 1d to do what my 350d does and let me set different settings in manual so i can have maybe 1/100@f16 in manual, f2.8 in AV and 1/60 in TV and rapidly switch between them as i need to ?
im pretty sure its a custom function somewhere, but i cant figure out which one
