I've got CS3 on my Mac MBP 15" and I'm printing to an Epson R1800.

CS3 seems to want to change the presets in my print dialog box (the OS, not PS). It also seems to add borders on two sides of the paper at times - like it gets confused about the paper size even though the paper size is selected.

Usually this gets corrected when I quit CS3 and restart it.

Anyone have anything like this happening to them?

I can't quite picture what you are referring to. Can you post a screen shot?

Screen shots are going to be hard.

Tell CS3 to print, you get the CS3 print dialog box (PS manages color, rendering intent etc..).

Select Print.

Apple print dialog comes up where you can select the preset, color management for the printer, paper type etc...

I have some presets set up for Red River Polar Satin and some others. When I select one of these, on occasion, all the presets are changed - paper changed from Premium Luster Photo Paper to Plain Paper. under color management, Color management was Off and is now turned on so the printer manages the color.

That was the first problem.

The second problems is that it will often on a given image try and print with a 1/8" border on the leading edge of the paper and then on the right edge of the paper (as you face the R1800).

Quitting CS3 and restarting CS3 usually fixes both of these issues.
