In the past I would shoot using Jpeg, and take a custom white balance.
I have a wedding coming up and think I should shoot using Raw+Jpeg.
If I do, what do I set the white balance to on the camera?

It will save your WB setting in the RAW file but you can easily adjust it later. But if you set it custom like you normally do, it will probably mean less work later. -Lloyd

I shoot RAW as well but will use the grey card when the light is consistent for the whole shoot (which is not very often for a wedding). Newfoundland Wedding Photographer
