In the past I would shoot using Jpeg, and take a custom white balance.
I have a wedding coming up and think I should shoot using Raw+Jpeg.
If I do, what do I set the white balance to on the camera?

Do it like you normally do. It will save your WB setting in the RAW file but you can easily adjust it later. But if you set it custom like you normally do, it will probably mean less work later.

Lloyd's right. Your Jpegs will have the WB you define for them in camera, and the RAWs will take on any Color Temperature you set for them in post.

i shoot all raw, and although you can change it later, i like to kinda get it as close as possible to minimize PP after. i carry a white card & 18% grey card. shoot the cards in the same area where you will do your shots (wide enough so you can tell the area and know where that image was shot). then you can apply the white balance to a group of photos in the same general area.

I shoot RAW as well but will use the grey card when the light is consistent for the whole shoot (which is not very often for a wedding).

It seems to me that I can get a better WB by having the correct WB set in camera with the grey card than I can by PP the RAW files and additionally the files seem to have less noise when shot at higher ISO's.
