Take a deep breath. Relax. Now panic!! Ahhh!

You don't NEED a light meter, but it sure does help. You could have your subject (or assistant) hold up a white piece of paper and meter off that. Bring that white piece of paper up to the far right of your histogram without blowing it out (touching the sides). The Photovision Calibration Target is perfect for this.

Set your camera to 1/125 or 1/250 (whichever your flash sync speed is) at an aperture of f/8 or f/11 and adjust either the power on your strobes or the distance from them and the subject. Get ONE light working at a time. If you toss two in immediately you'll tear your hair out for sure.

Lastly, what will you be triggering your strobes with? Do they have an optical trigger? When one strobes (if it were hooked to the camera) will the other 'see' the flash and shoot as well? Good questions for the manual. Shooting tethered works, but sucks. Being wireless and having a light meter are certainly nice tools to have, but necessary? Nah.
