Parameters applied during raw to jpeg conversion?

When converting a raw file to jpeg, how do I know what changes/parameters are being applied? I shot with a rebel xt, and I have the 'parameters' menu item set to 'set 1', with constrast/satruation etc.. all at zero. However when I open the raw file, the image is clearly different from what I see on the camera lcd. After I convert it to jpeg, the image looks just like what is shown on the lcd. I set all the parameters I can find in RSE to zero before conversion.

First rule - don't put too much (any) faith in the LCD - it's a small cheap screen, and from comments I've read here, they vary quite a bit.

Second rule (this is for me, and not for anyone else) - I only shoot RAW.

If you are using RSE you using RSE's parameters. RSE does not read "Canon" other than WB, so the parameters set in your camera have no effect. But that's o.k. because the whole point of shooting RAW is to make something new and maybe even better, not to simply reproduce what the camera would do if it was making the jpg. RSE, where it gives you settings that are similar to the camera parameters, gives you sliders on that are on longer scales and that allow finer adjustments. It also gives you access to functions that the camera doesn't do. If you like what you get by setting everything to zero, that's cool. But take the time to push those settings around. Maybe you will find something you like better. Or try other converters - each one will give you slightly different results.

It looks like RSE applies some hidden parameters to my image when I do the conversion. Because the resulting jpeg file looks very differently from what I see inside RSE, eventhough i did not change anything parameters on the screen before the conversion. I even set the 'post processing parameter' under the menu item to zero in RSE, but no luck. Any one know what is going on?

I figured out what the problem is. My monitor was set to use adobe rgb. Changing the monitor profile to use srgb fixed the problem.
