I was looking over some photos to put in my college portfolio a while back and when I went to convert one of my RAW files to JPEG, the saturation I added in Camera Raw looked like it didn't happen. In fact, it looked DEsaturated. And of course, when I upload to Flickr it was the same story, but it looked worse. Any ideas?

I can provide examples if you want.

30D, 5D | Canon 70-200 f/2.8L IS USM /Canon 24-105 f/4L IS / Canon 17-40 f/4L USM / Canon 50 f/1.8

Yes, it sounds like the old Adobe RGB vs sRGB problem to me ...
