I use the AEB (auto exposure bracketing) on my Canon. This allows me to take 3 shots, one at -2, the second at 0 and the third at +2 automatically one right after the other with one click of the shutter. After the first three I recompose and do it again...so I have at least 15 seconds between stitches. 5 seconds to recompose and then I must wait 10 seconds as my camera counts down for the next three shots since I use the timer feature. So between each stitch there is at least 15 seconds I would say. Now there are several factors coming in to play at least with this, how fast are the clouds actually moving and how distant they are from the camera. In my case the clouds were slow moving and not real close. Also your lens usage will dictate issues with movement, if you are zoomed way in with a 300mm lens then clouds will zip across your field of view faster than when using your 18mm wide angle. One other factor that probably has a lot to do with it is that clouds being irregularly shaped helps with the blending at the stitch joints, in other words there maybe stitch errors at the seams but with clouds you may not be able to tell as easily. One other thought is that no matter how many single plane horizontal stitches you do, you are only the amount of time it takes between each of those images joints. So from my first image to my last maybe 45 seconds or so, it really only matters between any two and their seam. Of course if you are doing a 360 degree pano you might have issues when you join the first and last images. Hope that makes sense. 7d/40d/350d/580EFII...assorted lenses and Photoshop.

The original photos are at the bottom, taken without a tripod on a windy day. I took them bracketed just to get a better chance of a decent photo, not with HDR in mind (hence no tripod) but I'm still pretty pleased with the results.
