What is the best metering mode when dealing with bright colors typically found at weddings such as bridesmaids' dresses and white wedding gowns? Evaluative, partial, spot, or center-weighted average metering? Thanks.

I meter off the brightest highlights on the bride's white dress then open up the exposure by 2 stops. I then take a test exposure and view the histogram and adjust the exposure if needed. Then I shoot on manual. Best regards,
