You need to set the ISO extension to on in the custom functions (not sure what number it is off the top of my head). This will allow you to set the ISO to H which is 3200

I know on my 5D you had to go into the custom menus and turn on the extended ISO setting. So look through your custom functions in the menu for something along those lines. And likely instead of an ISO of 3200 the next step past 1600 will show as 'H' instead.

the custom function you want is C.Fn 1-3
Set it to 1:On.
You will then be able to set ISO to H (=high =3200)

You need to disable the Highlight Tone Priority, C.Fn II-3, this will also let you use ISO lower than 200. .
