I work for a semi-conductor manufacturing company (not specifically imaging sensors, but the principles are the same). Based on the current technology and the manufactoring standards, I find it quite doubtful that sensor age (specifically on a 20D which isn't that old) would have any impact on noise. The time it takes for cyrstalline changes to occur in a chip under normal operating conditions would be far longer that what you would notice under a normal camera life. Additionally, I find it doubtful that the associated electronics would have any appreciable oxidation from a normal environment. My 20D images are just as good now as when I first purchased it.
