Better to turn all camera settings to their lowest and change in photoshop really.

I usually need to sharpen 20D pictures a little and also add a little saturation to most of them. so no I find them the other way.

I guess its just a matter of taste really.

Did you use the custom parameters to reduce the saturation ? That might help if you prefer it that way.

Can we assume you are shooting JPEG?

Not an issue for me as I shoot RAW 98% of the time.

I was gonna recommend shooting RAW too. That should take away all of the processing done by the camera.

If you still have a problem after that, then you probably need to calibrate your monitor.

I've always found that Canon cameras produce "warm" images. Whereas I have found most Nikons produce cold images with a blue tinge to them....

I usually shoot RAW and then adjust the colour during post processing.

Same here. The best way to solve it, for me at least.

Shoot with Canon!

When processing 20D raw files alongside 1Dm2n files I find that the 20D's start out a little desaturated (but that's in raw.) Not really noticeable by themselves, but still there. I'm not sure what to make of it.

I would agree with this as well. When adjusting the white balance in PP, I generally prefer a little cooler than what the camera has selected.
